Are you looking for a dinner to have on Pancake Day? This fun recipe takes the classic cottage pie and gives it a pancake twist. The topping is a sweet potato pancake so is lovely and crisp on the outside but soft and potatoey on the inside - it's a strange combination but it really works. This pancake recipe is a great option for dinner.
Ingredients
- 60g plain flour
- 175g milk
- 1 egg
- Pinch of salt
- 200g sweet potato (mashed)
- Oil/butter for frying
For the filling
- 1 onion
- 250g beef mince
- 400g tin chopped tomatoes

Method
- Prepare the filling first. Chop the onion and fry until soft. Add in the mince and cook until browned. Add in the chopped tomatoes and bring to the boil. Reduce to a simmer until the sauce is thick.
- Peel and slice the sweet potato and cook in boiling water until soft. Mash and allow to cool.
- Prepare the pancake batter by measuring out the flour and salt and adding the sweet potato. In a separate bowl, whisk together the egg and milk, then whisk into the flour mixture.
- Add a little oil/butter to a small pan and add in a ladle of batter when hot. Allow to cook on one side then gently turn the pancake - it will be quite soft so be careful when flipping.
- Serve the filling with a sweet potato pancake resting on top.

You can replace the sweet potato with regular potato mash if you'd rather
