Fajita pancakes are so easy to make at home. Packed full of flavour, these mouth-watering pancakes are perfect for dinner.
Fajitas are a fun family meal but we thought - how could we make them even more fun? Wrap them in pancakes, of course! These pancakes would be perfect for Pancake Day or any day of the week. We've simply replaced the usual wrap with a sweetcorn and coriander pancake - simple, yet delicious pancake recipe.
Ingredients
- 60g plain flour
- 175g milk
- 1 egg
- Pinch of salt
- 100g sweetcorn
- 1tsp coriander
- Oil/butter
- 250g chicken breast, chopped
- 3 peppers
- 1 onion
- 1 packet fajita seasoning
- Guacamole
- Salsa
- Sour cream
- Grated cheese

Method
- Slice the onions and fry until soft. Add the chicken and cook until browned. Add in the fajita spices and peppers and fry until soft.
- While the fajita mix is cooking, prepare the pancake batter. Cook the sweetcorn, according to packet instructions and allow to cool.
- Measure out the flour, salt and coriander and add in the sweetcorn. In a separate bowl, whisk together the egg and milk, then whisk into the flour mix.
- Heat a little oil/butter in a large frying pan and pour in a large ladle of batter when hot. Allow to cook on one side and flip/turn to cook the other. Lower the heat if the corn starts to pop.
- Lay the cooked pancakes onto a plate and pile in the fajita filling, sauces and cheese. Fold to serve.
Top Tip for making Fajita pancakes
Pancake batter is surprisingly resilient so you can test out other additions you have in mind (and if it doesn't work out, it's quite cheap to try again!)
