    Scrambled egg and smoked salmon on toast

    Simply scramble your eggs and add strips of smoked salmon when the egg is cooked, just to warm it up slightly. Toast the bread, butter it, add the scrambled eggs and smoked salmon topping and season to taste. Delicious!

    Pancakes with bacon and maple syrup

    These pancakes aren’t the thin ones you make on Shrove Tuesday, they’re American-style so they’re thicker.

    Pancake ingredients:
    150g self-raising flour (Tesco Self Raising Flour, 500g)
    2 tbsp caster sugar (Silver Spoon Caster Sugar, 500g, at Tesco)
    1 egg (Finest Brown Eggs, 6)
    150ml milk (Tesco Finest Channel Island Milk, 1 litre)
    25g butter (Tesco Butter Me Up, 500g)

    Bacon rashers (Finest Smoked Drycure Streaky Bacon, 240g)
    Maple syrup (Tesco Maple Syrup, No1, Medium, 275g OR Tesco Finest Maple Syrup No1 Light, 330g)

    1. Place rashers of bacon into a hot frying pan on a low heat and cook until crispy, or your desired consistency.
    2. Meanwhile, sieve the self raising flour into a bowl and mix in the sugar. In a jug or another bowl, beat the egg lightly with a fork, then add the milk. Make a well in the middle of the flour and sugar and add the egg and milk mixture. Stir well.
    3. Heat the butter in a frying pan. Add tablespoons of mixture to the heat. When they feel firm, turn them over until both sides are golden.
    4. Serve the pancakes topped with the bacon and drizzle with maple syrup.
